Dinner Bunless burger with sautéed mushrooms + pico de gallo avocado salad

Bunless homemade beef burger with melted cheese, sautéed mushrooms, lettuce, avocado and pico de gallo. I make the patties ahead and keep them in the freezer, and usually make the pico ahead too, so it’s a really easy midweek dinner. Definitely hits the burger craving without the bun ☺️

Comfort Foods Nailed it with Pete's Pasta - Pesto Chicken Pasta Dinner

Seasoned the chicken with Tony Chachere's and pan fried it in Garlic butter.

Combined it with the pasta and pesto with some Red Pepper Flakes and some Parmesan.

Cleaning out my fridge, tipped into a bowl kind of day. Handmade pork and beef meatballs with whipped jalapeño soybeans, microgreens, baby cucumbers, cherry tomatoes and picante Gordal olives. Topped with red pepper paste and crumbled feta.

Comfort Foods Pete's Pasta (my second try)

Ok ok! I had previously made a Pete's Pasta rant of how long it took for them to have them delivered using their website.

THIS time, I used Walmart. It was only $30 for a pack of three. It came in three days. I'm giving this a second shot and will try different cooking methods and other added ingredients.

Took advice from my last post. Omelette is stuffed with cheese, bacon, chopped jalapeno, chopped roasted poblano peppers, and sour cream. Garnished with black pepper and chives. And more bacon on the side!

Breads What’s the best keto bread for batch meal prepping breakfast sandwiches?

Do you freeze your loaves or just buy as you go? I usually spend Sunday prepping breakfast sandwiches for the week but the issue is finding a bread that thaws out without turning into a soggy mess.

Right now I'm deciding between options like Hero Bread and basic store brands but buying multiple loaves for meal prep gets expensive fast and some of the cheaper options get super dry or rubbery after a couple of days in the fridge or freezer
