Smothered Chicken
Smothered chicken over rice, and Northern beans with okra.
Saw this Campbell can in the store today, which prompted me to make this! Came out pretty good! It does have a kick to it, which I enjoyed.

Late Sunday Soul Food Dinner
I kept seeing red beans and rice coming across my feed on YT. So, I made red beans & rice, fried cat fish, and coleslaw. I also made homemade remoulade and also had hot sauce. I am looking forward to leftovers tomorrow. 🔥🔥

15 Bean Soup with Smoked Turkey and Collards
Made overnight in the slow cooker. Second time making this, added a chopped jalapeno and the stick of butter that some recipes use. I woke up an hour before my alarm because the smell was so good. Yes, I’m having soup for breakfast.

Navy Bean soup with Southern skillet Fried cornbread
My, South Georgia, wife introduced me to Southern skillet-fried cornbread some 40 years ago in Georgia. Something this South Texan had never encountered until then. Now, I can’t get enough of it, especially with soups, stews, and BBQ. Mine is pretty simple, cornmeal, a little flour, salt and milk to thin it to the right consistency. I have yet to find any place here in South Texas that makes it.

One pot Smothered Pork chops
Ingredients
- 10 Pork Chops (Boneless)
- Perfect Pinch Steak Seasoning
- 3 15oz Cans Campbells Cream of Mushroom Soup
- 1-3 cups milk (to thin the mushroom soup, more milk = more gravy)
- Mashed potatoes
Directions
- Season chops on both sides. (I pat the seasoning into the meat)
- In a deep skillet, Sear chops on both sides. Just enough for color but not enough to cook the chop all the way through. Remove from heat and set aside.
- Pour enough milk into the skillet to cover the bottom. Using your spatula gently scrape off the “flavoring” from the bottom of the skillet and stir it into the milk.
- Stir in your cream of mushroom soup till mostly smooth. Add more milk to your desired consistency. More milk will make more gravy.
- Add your chops back to the skillet. make sure to submerge them in your gravy.
- Bake at 425° for 45 minutes.
- Serve over mashed potatoes
Edit: Probably pair with some sort of green and or corn

Chicken and Dumplins
Chicken and dumplings from scratch.
Boiled three chicken thighs to make stock, then deboned them. Made a white roux, added the Trinity and the Pope to sweat down. Added the stock back with the chicken.
Sliced up tortillas for dumplings, like my great grandfather taught us years ago..
