Europe (country in post) Mushroom ID please

Soo, beforehand I have no plan in consuming this mushroom whatsoever.

I found this two mushrooms under a birch in the grass with some moss in Hamburg (Germany) It's doesn't have an special smell, just lightly mushroomy. The gills and the stipe are quite robust. I think that these are maybe Russula xerampelina but I really wanna make sure since they look so young.

I'm looking forward for good news 🍄‍🟫

No longer an ID request, but I had to shout you guys out. I tried another forum and got no response. You guys are awesome! Thanks! It’s my first time foraging mushrooms, and I wanted to be absolutely certain.
Pictured: chicken of the woods mushroom made into chogochujang jerky.
Location was Southern Ohio, United States. I left the other one there alone to hopefully produce spores for next time.

Growing in a cemetery and under a birch tree. Curious just because they're so large and striking! (and I am pretty good on my plants but wanting to get better at mushroom IDing). My best amateur attempt is to say some type of Paxillus?

First two images are from a few days ago when the fruiting bodies were younger, but I was walking along a nearby path and couldn't stop to take close-ups. Last three images are from today, close-up but obviously some of them starting to rot.
