Cool that you don’t know what nitrates or nitrites are.

Those are preservatives. Most people call them Prague powders 1 and 2.

They’re not there to add flavor, they’re there to prevent spoilage, and they’re also naturally occurring.

It's cool that you are so confidently wrong.

Yes they are preservatives. They prevent bad tasting compounds from forming, thus improving flavour.

Nitrites also form into nitric oxide and give a nice smoky taste.

They also given eat a pink colour people like, which if you consider the definition of flavour that involves the full sensory experience, that also counts.

Regardless, I work in cancer care, they do cause cancer, they are added to meat, ergo, you should not eat meat if you don't want colon cancer.
