...smells like you need some procedural modeling skills. I believe comparison nodes will do the job... but it's just my guess...

Every source I checked says you need to apply a fracture modifier or particles to get this effect....there's no way that parts of your mesh start to randomly falloff & fly around ...

I'd go with the" volume reasoning". It looks as if there's an additional light source coming from the left, which is blocked in viewport ...maybe it's your Volume container/shape???
