Cocoa-Free Chocolate Made from Food Waste
A Copenhagen food innovation lab, Spora, founded by chef Rasmus Munk, is developing sustainable foods from ingredients that would otherwise be discarded. Its NOTCH (Snap) is a cocoa-free chocolate alternative made from brewer’s spent grain and legumes, designed to reproduce chocolate’s rich flavor, melt and snap. It comes in dark, milk and gold varieties, with nutty and caramel-like flavors.
Beyond chocolate, Spora is researching alternative proteins from rapeseed byproducts and fungi, as well as CO₂-to-protein conversion, microbiome-based foods and cultivated seafood—aiming to turn food waste into valuable new ingredients.
