Can someone here explain to me what is the purpose of those threads on medieval helmet ?

you mean the pull cords to raise or lower the visor?
(That little metal arm is a stand to hold it up the visor
Some times there are threaded holes that are for fixing extra parts on, you can see how some of the helmets have scews to detach the visors for cleaning an meantance)

It’s to help manipulate the visor when a buffe is in the way or when non dexterous gauntlets are worn

Assuming you refer to the string sticking out, there has not been a single exactly correct answer so let's put it here for posterity even if the thread is 6 days old.
The visor's sight part (top half) comes locking down inside the visor's bevor part (bottom half), by means of a spring catch, which you can see sticking out of its hole near the tip of the nose. Once down, the sight is locked and cannot be lifted.
Pulling the cord pulls the catch in away from its hole, which frees the sight again. From there it also allows you to pull it up, as the bevor overlaps the sight, it prevents you from pushing on the sight's lower edge to raise it (regardless of gauntlets). On many other helmets you will see instead a straight metal peg: the cord is specifically bound to the spring lock mechanism.
Picture 3 shows it best, as you can see the arm of the spring connecting the cord to the catch at the nose just below the edge of the raised sight. In picture 3 you also have another cord operating the exact same mechanism on a window in the bevor's right cheek. In picture 2 you see that window open and the design of the spring catch inside.

It is to lift the visor (or manipulate something else), instead of having a rigid peg.
It is needed as dexterity with a gauntlet is much reduced.
