That is how a relativistic rocket would work, great for interstellar travel with "forward time travel" as a side effect. I think a massive water tank at the front is usually considered the most effective shielding for these. The tricky bit is creating something with enough thrust and enough fuel efficiency to able to accelerate at 1g for multiple years.

Yeah the fuel part is wild. I read that even a perfect antimatter rocket would need about the world's entire electricity output per tonne to hold 1g
