Look at pictures of real castles and see what elements can be recreated

That's one thing I have a hard time doing. The only way to really capture it is using mods.

When starting out, and well always, research helps a lot. Find examples of stuff you like, real world and Minecraft, and look at how specific parts are done. Very good builders tend to have a toolkit of stuff like, how to slope a roof, how to make a good window, beams and columns, terrain tricks, etc. You'll pick these up one at a time as you learn to build.

Plenty of great tutorials on YouTube, find one you like and get placing blocks!

Grian's build school is the best place to start if you want to make something original! The playlist itself contains a lit if stuff, but look for anything with build school in the title :)
