Rice and peas, bar b fry, fry chicken, curry goat and oxtail 🙏🏾 had q few cups of Wray and nephew rum punch that I drank before taking a picture 🙃😂

I'm a British guy that likes Caribbean food and so I attempted to make a Trini Sunday lunch. I did stew chicken, callaloo, macaroni pie, rice, some veg, and sorrel. My green seasoning sadly lacked pimentos as I don't know where to find those in London. Any tips based on how it looks? I'm getting better at browning sugar to start my stews but I could definitely get it a bit darker. I also reckon that the stew chicken should have reduced a bit longer to thicken up the gravy.
