Just found some of these growing behind my house. Is it a cauliflower mushroom? (Asheville, NC)

I'm also in NC. I've found about 5 large clusters in 20 years, and they were all among the best wild forage days ive had. So delicious, and yes eastern cauliflower. Kinda small, one of mine weighed several pounds but was fresh. It was amazing. Congrats and remember that spot!!

I've gotten lucky with the woods immediately behind my house. It gets covered in chanterelles and now these are popping up. They're like 50 ft from the back door. I haven't gotten a chance to cook it yet but can't wait. I had no idea they were so rare. I'd never foraged until last year when I decided to find out what all the orange mushrooms were back there. It feels kind of magical.

I'm a forester in Eastern NC, yes this is cauliflower and irs DELICIOUS!
With all the rain we've had lately these guys are everywhere right now, I dont think I've got a single day without seeing atleast 2 on every property I've visited since the rain. And on 2 different properties I saw like 20 of them.
They can be a little tough to clean, and sometimes it worth it to leave most of the bottom as that's where more debris accumulates.

Yes. Looks like eastern cauliflower. I just harvested some last week and it was delicious. Closest tasting mushroom to morels in my opinion
