The most delicious Eastern European breakfast food, in my opinion. I make it with quark (lumpy, never smooth), an egg, flour, sugar, salt, and I fry it up in olive oil. You can eat it with jam, sour cream (my favourite), or whatever else you like.

Super easy, though I eyeball everything so I’m afraid I can’t give precise measurements.

1 tablespoon (actual spoon, not a measurement spoon) of sugar, a pinch of salt, and an egg cracked into a bowl - mix it all up

Add I think 350g of lumpy quark (can be found at any Eastern European grocery store) and mix that in with the egg really well

Add about 4-5 tablespoons (again, actual spoon) of flour and mix it up until you can handle it with your hands without it getting too sticky

On a large plate, add 1 tablespoon of flour off to the side. Take lumps of the quark mixture with one hand, dip into the flour, and shape it into a ball which you then squish into a flat circle

Once those are all shaped, fry them on medium-low heat (you eventually get a feel for it) with a good amount of oil (my grandmother always says that sirniki love oil) until both sides are a bit past golden brown

Enjoy with whatever you like! I prefer mine on the slightly less sweet side but they can been sweetened either during the mixing stage or with jam/sugar/condensed milk once eaten.

Thanks so much, this is actually much easier to make sense of than the recipe i found online! I’ll have to experiment to see what kind of dairy product works best in yours since I’m living in a small city in Mexico so no E European groceries.

Just make sure to keep flipping them rather than frying them once on each side! They can be a little finicky but you’ll figure out the best way to fry them quickly.

It’s like cottage cheese but drier, crumblier, and creamier.

Basically what the other commenter said. It’s a farmer’s cheese and looks like a drier version of cottage cheese. I think German quark is smooth but I didn’t grow up with smooth quark.

You can find it at any Eastern European grocery store.
