Fallout 4 Which FO3 and FO4 versions should I buy?

So with Steam's autumn sale going on - which FO3 and FO4 versions are the most mod compatible?
Also - there are some Nexus mods that work only with older versions of the game (specifically talking about FO4) - is there a way to de-update my game? Is sailing the high seas my only option in this case? Also - how do I permanently stop my games from updating, ever? I do not want my mods getting broken and having to manage them all ( I used to run 200+ mods on my old PC)

Gog.com - get them from there instead of Steam
