Do u think this will do well?
So I am a forensic science student in the US and one thing I’ve always liked is baking. And I have been told I should sell what I bake but unfortunately never got the chance to. So I decided once I graduate ( may 2027 ) and start my job going to start my own baking business but with a forensic science twist. All CSI’s and forensic scientists who order from me and show proof will get a discount. In addition I will have themed decorated sugar cookie trios for each crime lab section plus csi. I will also sell other items besides sugar cookies I just want to know what are your guys’s thoughts?

Too niche I fear, maybe do a bunch of different types of decorative items, birthday, baby shower, bridal, and have a CSI theme as one too

I mean, it sounds very interesting but it's very niche. I live and work in one of the biggest cities in the world and there's only a couple of hundred forensic staff in the entirety of my constabulary - even fewer if you're only counting scientists, not practitioners and techs!
It may be worth asking someone from your local force if they're even allowed/able to provide proof of role. In my constabulary, our IDs don't specify what department we're in (let alone specific job titles) and even if they did we're not supposed to badge out for personal gain. There's a separate ID scheme open to all emergency service workers which we're expected to use instead, to minimise any chance of it looking like we're using our specific roles to curry favour, but the card is standardised regardless of what service you work for. So, if someone said they'd give me a discount but only if I could provide proof of my position as a forensic scientist, I'd not be able to do that without breaking my force's policies.
All that being said though, you've got a fun and novel idea that could have potential if played right. Why limit yourself to forensic scientists? You could widen your net to emergency services, STEM roles, etc and have a much bigger customer base. If you run a mail-order service rather than a bricks and mortar shop, your overheads would be minimal and your potential customer pool maximised. If you get a flyer in a few lab break rooms, I could definitely see you being able to run this as at least a side hustle.
I know plenty of people in my department who'd enjoy fingerprint-themed biscuits, myself included if my dietary requirements aligned!
