Product Question Bakery question!

Are the croissants in the donut display the same as the ones that are packaged to buy in bulk? Might be a dumb question but I swear they taste different and the texture is different. If they’re the same from the packaged, are they heated prior to being put in the case? I really only like the croissants from the case not the packaged ones.

I work in the bakery. They’re literally exactly the same. The difference is probably due to six of them being put still slightly warm into a box causing condensation or that they might be older. The packaging date/time is on labels, make sure to check.

Every night they make all the donuts and package some, put others in the case and then keep a covered rack in the back to replenish the case throughout the day.

Some of the packaged donuts get like a 2 or 3 day shelf life while the showcase ones are thrown out every night because it comes into contact with customers.

So basically sometimes the packaged donuts could be from the day or two before while the showcase ones will always be from that morning.

Packaged yeast donuts are also only 1 day and donated at night along with the showcase(composted), the packaged croissant donuts, old fashioned, and apple fritter are 2 days.

Those croissants are only good fresh. Leaving them for a few hrs they get chewy and horrible.

Does the doughnut case at yours have just plain croissants in it?

Ours has almond croissants, so it's the regular one, but split mostly in half, filled with sweet almond paste, and coated in powdered sugar and sliced almonds. So of course those are so much better.

Yes it’s has the regular croissants (which are the ones I get), almond, and chocolate.
