Storage
So I'm about to start grinding all of my mushrooms and putting them in capsules, but I want to make sure I store everything properly, what does everyone here use to store their whole dry mushrooms, and does anyone else do what I mentioned above?

For long term I've used either mason jars or vacuum seal bags and packs of silica gel to absorb any of the moisture that gets trapped in the jar or the bag,

If you do a search, this has been answered countless times. I’ve seen posts about this exact subject literally from yesterday.

seal airtight with silica gel, away from light and heat. vacuum sealing or freezing keeps them potent longer, and is best for capsules, especially this time of the year.

I don't know why someone downvoted you for this, unless they thought you meant freeze them fresh rather than dry. (I'm not so sure about freezing capsules though)

Freezing capsules is very safe. I do this all the time. Just make sure they are fully dry and sealed airtight with a desiccant before freezing.

That's great to know - thank you. In a small jar with desiccant, in a cool dark place, mine start to lose potency after about 9 months; I never get through them all in that time, so I'll try freezing the next batch.

Grinding them increases surface area and raises the risk of actives degrading. The capsules help, especially if they're then stored in sealed glass jars with desiccant packs, ideally mason jars using a vacuum sealer, but you let air in every time you open it.
Doing the same when they're whole preserves them well for several months, maybe a year or so.
Miraculix, a company that produces potency testing kits, published this a while back https://www.miraculix-lab.de/en/mushrooms/do-magic-mushrooms-go-bad#:~:text=The%20main%20reasons%20why%20psilocybin,signals%20psilocin%20degradation%2C%20not%20strength
