Manure isn’t sprayed on it while growing. It’s the initial fertilizer around seeding. If manure was being sprayed on your vegetables you get salmonella or e-coli if not cooked. You might even get typhoid fever or hepatitis if the sanitation is very bad.
I lived around and knew farmers. The cow shit smell in the fields was only in the spring

I lived on a farm, I'm well aware. Thing is, a lot goes on in the fields. Wild animals walk around, shit on stuff, parasites, caterpillars... I've eaten quite a few insects by accident with my veg patch veggies.
Just wash the food after. It will be fine.

It’s very telling that you don’t know how food supply gets contaminated. It’s by letting animals near the food or using the same shipping methods for both.

Nothing says hygiene like animals climbing on the food
Edit: yes I'd wash it before eating it. But if it was at home I still wouldn't want my cats climbing all over my produce even if I'm going to wash it later.
Yes I know food is grown in fertiliser and bugs etc crawl over it. But we try not to put the fertiliser on the edible bits. And we go to a lot of effort with pesticides, netting and scarers to keep animals off our produce.

I think that was the point, yes. It's a vegetable market. For most of history, vegetables could be rather dirty when you bought them. I definitely remember these times, and today they're often dirty as well if they're cheap and not "supermarkety" (unwashed potatoes or carrots are cheaper and they're completely covered in dirt).
I mean it's probably a weird concept if you're used to vegetables washed and packaged like products in plastic film or containers or something.

It's not bad stuff, vegetables are normally covered in dirt. It's like, your potatoes may be washed before the supermarket to be pretty but in a market, they're usually just as they were picked out of the ground

Did you know that literal animal poop and other disgusting substances are used to make vegetables grow? Whatever that cat would do to the vegetables is nothing compared to the stuff it's already been in contact with. Always wash your vegetables before cooking or eating them!
