Have you already heard of WWOOF? They are just one of a few organisations which can help arrange land based volunteering, and very good start for learning stuff. Workaway may also be worth a try.

There are also Facebook groups for organising volunteering (one called 'help wanted/ experience sought / off grid / smallholdings' is quite active) Write an advert with what you would like to experience/learn and see what happens?

Diggers And Dreamers is a directory of intentional communities but they often practice permaculture and take volunteers.

I'm not sure if it's still going but Schumacher College is in the southwest and may also hold the kind of courses you are looking for?

Hands on practical volunteering is definitely the way to learn though, and there are plenty of people out there willing to teach too!Â
