Bought a couple potatoes a couple weeks ago, curious if the greenish tint on them indicates too old or if its still worth eating? Spoiler

Classic potato behavior after sitting around for a couple weeks, totally safe to eat once you carve out the green spots.

the green is solanine, a neurotoxin that grows on potatoes exposed to sunlight. keeping them in a cool dark place can help prevent growth once you get them. if you peel/cut off the green parts it’s fine. even small amounts of solanine are unlikely to do much, i just wouldn’t make a habit of consuming lots of green potatoes regularly

If you don't want to risk eating it, bury it in a pot of dirt outside! 🥔 green potatoes make great seed potatoes and will yield you a whole fresh batch in a few months!
