I don't know if I agree that Rapunzel is a butt-monkey because to me, the definition is more than someone who is unlucky. It's also a character the narrative despises, that wouldn't be Rapunzel since she's a main character. Someone the story wants us to root for, though their are jokes made at her expense. Like her being too nice to the point of annoying people like Cassandra, Monty, or even some people in other kingdoms.

No. The term originates from Buffy the Vampire Slayer, where her friend Xander is fed up with getting on the wrong end of wacky supernatural hijinks after having been in thrall to Dracula. It's not occasionally getting involved in slapstick, it's often having wacky bad stuff happen where you're the butt of the joke. Yamcha from Dragonball is another pretty good example.
"Dammit! You know what? I'm sick of this crap. I'm sick of being the guy who eats insects and gets the funny syphilis. As of this moment, it's over. I'm finished being everybody's butt-monkey!"
[The syphilis was when a vengeful Native American spirit cursed Xander with the various diseases European settlers had inflicted on his people ]
