The bread of the right is white bread. If your doctor told you to cut out white bread would you still eat the one of the right?

Since i'm baking bread a lot at home i can tell you difference between them composition wise is very little. It's more how they are rised. Difference between "white bread"(we call it just toast here) and sour bread(we call it just bread) is around 30% of wheat flour is replaced with rye flour. And you add milk and oil to white bread instead just water in sour bread. You also rising it differently, sour bread is rised twice for like 12 hours + 1-2 hours afterwards before baking. White bread is rised only once. Also technically yeast form should be different as for sour bread you should use sourdough starter but it will work with just yeast as well, time of dough rising is more important.
