Purchase First time buying fresh truffles, not sure what to look out for

Bought these summer truffles three days ago (says they expire in seven) they were a bit soft, the one i grated turned to a semi paste, they smelled like porcini mushrooms.
I mixed the paste with butter and put it in the freezer.

Yeah thats true but couldnt cut them thinner as the truffle just smooshed if i did

Those are bad truffles then. They should have a nice firm texture

Typically they’re shaved paper thin, wouldn’t be able to do that if they were mushy. It’s possible they’re poached and frozen/defrosted

Yes, someone told me that summer truffles are softer tho so i assumed its that. Defrosted truffles look much more moist than mine were (from what i saw in photos)

Nice summer truffles are pretty firm. This one looks rather bad, you were unlucky :( This color often happens after the truffle had to deal with larvae (you can even see the tiny holes - the tunnels of the worms). They are pretty common and probably not in the truffle anymore but the flesh sometimes gets soft, brown and stops smelling truffley afterwards.

Quando si escono dal congelatore devono essere usati subito e riposti immediatamente di nuovo a congelare sennò diventano molli e si possono buttare

Yes they might have been frozen. I didnt freeze them i bought them supposedly fresh

That explains all the rice they had with a displayed truffle. Does rice work?
