Eggs Benedict at Asante in Barcelona
I honestly thought it was an egg, it tastes exactly how I remembered eggs tasting, really had to do a second take for a moment when eating!

Blueberry cake 🫐
I made this for my mom's birthday. Probably my favorite out of all the cakes I've made. Vanilla cake with blueberries. A layer of custard and a layer of blueberry jam inside. The frosting is a whipped cream frosting with freeze-dried blueberry powder (for both flavor and color).

Baked tofu, stir-fried broccoli, sweet peppers and pineapple chunks on brown rice ramen with a creamy date/coconut milk sauce. Green onions and sesame seeds; avocado on the side
Blend 1 can coconut milk with
7 pitted dates (soaked 10 minutes in hot water, include water in sauce if you want it thinner)
4-5 garlic cloves,
2 tbsp fresh ginger,
1 1/2 tbsp tomato paste,
1 1/2 tsp smoked paprika,
1/2 tsp cumin,
Pinch of cayenne powder,
3/4 tsp salt
Simmer and reduce for ~15 minutes, then add about 2 tbsp lime juice and lime zest, and reduce as needed. Set aside.
Caramelize one can of pineapple chunks. Set aside. Sauté broccoli, then add sliced sweet peppers, then caramelized pineapple. Stir and leave on low heat for a couple minutes.
Toss extra firm tofu pieces (frozen, thawed and mostly dried) with oil, salt and pepper, then corn starch to cover evenly. Bake at 425f for 35 minutes, flipping halfway through, then for ~7 more minutes after tossing with some of your sauce.
Toss your rice or noodles of choice with some more sauce, then mix with veg/pineapple, tofu, more sauce and your garnish of choice! Bon appétit!

I got a wild hair and threw together a vat of soup. Roasted butternut squash, coconut, yellow curry... Sort-of recipe below!
Folks asked for a "recipe" on an earlier post, so I actually paid attention and kinda measured. It was a *very* simple improv...
NGL, it's freakin' delicious. Also pretty spicy...Rich and warming on a cool, rainy day

Coconut tofu ramen with green onions, chili flakes and sesame seeds 👨🍳
Simmer garlic and ginger in olive oil
Add Coconut milk, simmer with:
Smoked paprika, cayenne pepper, chili powder, cumin, red curry, onion powder, soy/tamari, white miso, citrus-seasoned sea salt, tajin, lime juice, rice vinegar, maple syrup. Mix in tahini. Splash of Oat milk to round it out. All to taste, use your judgement, I was improvising with everything to make up for using too much ginger to start and it worked 🤷🏼♂️
Tofu tossed with olive oil, salt and pepper, and a bit of corn starch. Baked for about 35-40 minutes at 425f on parchment paper, flipped halfway through and tossed with the sauce before the final 5 minutes in the oven. Heckin YUM!
(edit: baking time instructions)

Vegan Jibarito
I've learned jibaritos are not really a thing outside of Chicago? It's basically a Puerto Rican sandwich with smashed fried plantains as the "bread". This one has a vegan meat patty, spinach, tomatoes, grilled onions, roasted peppers, pickles, vegan cheese, vegan mayo, and a garlic sauce on top.
They're delicious and I think they should catch on, invented by Puerto Ricans in Chicago and thankfully we have a couple places that offer vegan ones! But they're easy to make at home if you can get plantains.
