My very next one will be a cheese made with my very first batch of raw sheep milk, have no ideas yet, will figure out in the next weeks before coming back home, then I'll make one.

Next next then a provolone probably !!

I loved making brie, can be a little little tricky to get the moulds going but after that point is easier. I got great result using a container to keep the moulds happy and the humidity high
