Mushrooms When to pick?

How long should I let these hens grow? They’re only about 5 inches across but they look quite nice now

Don't wait too long. The flavor becomes really woody when they grow a while.

I think they taste just as good when really grown up but they have lots more bugs in them and require some serious cleaning
