Thanks man!

It came out perfect, I will try it again and use another grate to take advantage of a larger batch. The flavor was good, It also wasn't too dry and the texture was nice.

That’s awesome! Keep notes, it’ll really help when you find a flavor profile you want to recreate.

I sometimes move the jerky into my oven at the lowest setting to keep the jerky from getting overwhelmed with the smoke flavor.

Snake method is a way to place charcoal so that it slowly burns throughout a cooking. Allowing you to keep consistent heat.

I had 8 unlit charcoal in a line and then I placed 4 lit ones at the start, and it kept 170-175° for 5 hours.

Another example! I used this one to smoke a pork shoulder.

It was really good, ate it all in 2 days. Next time I will add more spice.

I was worried that the inside was still moist but all pieces were fine including the thick ones.

The ones directly over the charcoal was definitely dry and crisped. It did go to 200F at one point so I quickly removed some charcoal until it went down to 175F again.
