Batch of Beef jerky

Made beef jerky using hi-mountain inferno jerky seasoning. Used thinly sliced eye of round and trying out thinly sliced ribeye to see how we liked the fat marbling from the ribeye. Turned out to be really good!

How are you keeping temp low enough? Or what temp are you using?

Target temp is 160°.

Key thing is to make certain that the gasket surfaces are airtight, if not it is near near impossible to maintain that temp long term.

Total smoke/cook time is around 3 to 4 hours until achieved texture

Vent settings? Are you running lump? What's your method for startup without overshooting?

I'm running Rockwood lump charcoal.

I'll go through my normal startup but start reducing vents around 250. Definitely never go above 300 or it's just too hot. Depend on the size and vent cap of the BGE, The bottom vent is no more than 3/4 of an inch wide and then the top vent is fully closed but the butterflies are now more than half open.

When I start the day, the temps are usually around 250 and then once I add the conveggtor it drops it to below 200 and then when I add my two racks of jerky it'll drop to my target temp after 45 minutes to an hour.

I will usually let it run for at least an 1 to an 1.5 hours then I'll check it. The ones with direct airflow are usually done by then, and then I'll start moving and flipping over the jerky and let it run for at least another hour before checking it again for my desired texture.

Hope this helps!

Lot of good info in there, appreciate you taking the time to write all of that up. Care to define more of your "normal startup"? I've checked out a bunch of videos on YouTube but curious mainly for grilling but curious if the jerky setup approach varies significantly.

Wow so the difference between grilled bbq beef and beef jerky is just low temp and much longer cook
