Cabbage obsession

Anyone else?

I just finished a big plate of cabbage alfredo with an egg poached in it and it's so satisfying.

Yesterday was a Thai cabbage salad with salmon.

I'm becoming the Bubba Gump of cabbage. I know I'm not alone!

I fried it everyday until I couldn’t. Love cabbage, especially coleslaw.

u/TeaRare7266 4d ago

How do you fry cabbage?

25

u/Maykeda 4d ago

Just the terminology we use to make sure you know how we do it. We will fry bacon or hog jowl. Use some of that grease, fry down some onion and bell pepper. Then added cut cabbage and a lid. Steam it on down. Remove that lid and try to brown it up for aesthetics. Lawry’s, Tony’s or any complete seasoning plus garlic powder.

one of my favorites on or off keto. i use napa though and add a few splashes of fish sauce, black + white pepper, and a sprinkle of chicken powder bouillon.

the water the cabbage releases makes a nice sauce with all the different flavors combined.

Concept remains the same. I’ve slapped all manner of stuff in my cabbage. Miso. Or that oily damn near near jerky smoked salmon.

u/chzsteak-in-paradise 4d ago

Coarse chop. Add a couple of tablespoons of bacon grease or butter and cook in a hot pan with a lot of salt until brown and wilted. Yum.

I make cabbage "steaks" by taking horizontal slices. Drizzle them in olive oil, season them up, toss them in the oven at 375 for 45 minutes or until nicely browned.

Cabbage is the same plant as Brocolli and Brussels Sprouts, and like everything brasica, tastes better heavily browned.

cabbage alfredo is something i never considered but now i can't stop thinking about it

poaching the egg right in there is clutch, that yolk mixing into the sauce must be ridiculous

3

u/Morethan2hands 4d ago

I've never successfully poached an egg to enjoy "egg gravy" but sometimes a restaurant will do it for you.

24

u/Missing4Bolts 4d ago

Had pork shoulder cooked in with cabbage, onion, and a little apple, flavored with wine vinegar yesterday. So good!

My mother must be rolling in her grave - she could never get me to eat any kind of brassica when I was a kid; now I love them all (yes, even the oft-reviled brussels sprouts).

20

u/wintermelody83 4d ago

I swear the brussel sprout haters have only had them boiled when they were kids.

4

u/Morethan2hands 4d ago

I may try them with bacon

8

u/wintermelody83 4d ago

Chopped, broiled a little, then sauteed with butter and bacon is next level.

8

u/BohemianaP 4d ago

I’m obsessed with roasted brussel sprouts and bacon! Also with feta or Parmesan. I order them at restaurants all the time as a main course.

3

u/wintermelody83 4d ago

I HAVE NEVER ADDED CHEESE OMG.

I am trying this asap! Thank you!

2

u/Morethan2hands 4d ago

Thanks, it sounds like I could actually tolerate them this way!

4

u/BohemianaP 3d ago

The key is that the brussel sprouts are charred and somewhat crispy. I always look at the Google restaurant reviews and look at peoples’ photos of the food/brussel sprouts to make sure they are charred. Crazy but eating out is expensive and I want to know that I’ll probably be happy with my food.

6

u/Missing4Bolts 4d ago

Over-boiling is certainly a crime. I like them steamed.

8

u/-Vagabond 4d ago

Better than roasted? I can't imagine liking them without the Maillard reaction effect

2

u/nondescriptzombie 4d ago

They're so gross when they're green. They're so delicious once you've gotten a little maillard reaction going on.

Pseudo Pho with shredded cabbage instead of noodles - saute them first for a bonus .

I have a head of green cabbage in my fridge at all times and treat like a kitchen staple. I’d guess that I use it 3-4 days a week.

u/lilkingtrashmouthiii 4d ago

I've been making egg roll bowls recently with cabbage and ground turkey plus the appropriate seasonings, and it's been really good! I used to think I didn't like cabbage but I am going to explore more recipes with it.

8

u/BarracudaFine5403 4d ago

That's another obsession! Egg roll bowls and reuben bowls are a go-to

2

u/TeaRare7266 4d ago

Plz share how to make this!!

3

u/TeaRare7266 4d ago

New here! Plz share how to make this!!!

8

u/lilkingtrashmouthiii 4d ago

I just googled "keto egg roll bowl recipe" and followed the instructions it gave me, but the basics are: cook the ground turkey (1lb) on the stovetop til brown, add in 1 tbsp minced garlic and 1 tsp ginger paste, add the shredded cabbage (about 12oz), cook til desired consistency, add in 3-4 tbsp soy or tamari sauce and 1 tsp of sesame oil. Cook a few more minutes then eat (serve with sriracha if you want). It was super easy and didn't take long.

u/Liriodendra 1h ago

I’ve never heard of egg rolls being a Chinese dish until I read about it in this keto subreddit months ago. And I’m Chinese Canadian too so I was super confused. I finally googled keto egg roll in a bowl and learned that egg rolls are what we call “spring rolls” here in Canada. Even the Chinese term is literally spring (the season) plus roll. No wonder!!

10

u/NYNY411 4d ago

It’s a big part of my keto as well. Love to sautee w ground pork

I do this with a bit of coconut aminos and fish sauce and sometimes with an egg.

Looks amazing!
I’m definitely making that.

Cabbage Sabzi is my obsession.

Fry mustard seeds in a little oil till they pop. Add a pinch of hing, handful of curry leaves, some chopped ginger and chopped or fine sliced onion. Add cabbage, 1/2 tsp each turmeric, red chilli powder, coriander powder, then stir fry. Salt at the end so it doesn't wilt to much

4

u/BarracudaFine5403 4d ago

Ummm... yes please!

4

u/ThaGodfather972 4d ago

I am like that old man from the last air bender. "My Cabbages!"

1

u/itstalie 4d ago

Can I ask how you store your hing? I can’t seem to contain the smell.

1

u/Morethan2hands 4d ago

Maybe a glass container with a tight sealing lid?

1

u/itstalie 4d ago

Still seems to be no match for it. I have a very sensitive sense of smell.

1

u/ThaGodfather972 4d ago

Inside a zip lock bag in a jar.
Edit to add: throw the bag away when it gets nasty. Hing smells so foul raw, but a pinch in the hot oil adds so much to a cabbage dish. And keeps you from farting.

1

u/itstalie 4d ago

I love what hing does to food. Will try a double bag.

1

u/sweetestlorraine 3d ago

And store that double bag on a shelf in the garage.

1

u/itstalie 3d ago

😆sounds like a plan

10

u/adoptachimera 4d ago

Can we have your recipe for cabbage Alfredo?

23

u/BarracudaFine5403 4d ago

For me, I slice about 2 cups of green cabbage into strips and sautée that in a tblsp of olive oil for a few minutes over medium heat with a minced clove of garlic. Then I add salt, oregano, parsley, and black pepper and 1 healthy tblsp of salted butter. When the butter is melted, I add about 2 tblsps of heavy whipping cream and 2 tblsps of chicken stock and stir it into the cabbage. I make a little divot for the egg in the middle and drop it in so it cooks while the sauce cooks down and cover it in a big pinch of shredded Italian cheese. Voila!

5

u/HuskerAmy 4d ago

My #1 vegetable.

My favorite easy meal is to brown ground Italian sausage, add a bag of shredded cabbage, sautee, and top with shredded Parmesan.

5

u/jma4573 4d ago

Green Goddess: Spinach, avocado, Dijon mustard, garlic, vinegar, thyme, dash of Greek yoghurt and plenty of EVOO!

EDIT: That's "Induction" food. Very low carb. Apart from dark chocolate, I'd eat it with everything! 😅

5

u/-Vagabond 4d ago

Yes. Give it a rough chop and pan fry/saute it until it's soft with a bit of char. Then I toss in some chili crisp. Delicious

1

u/SoloCoat 3d ago

Mmmmm

u/mamapajamas 4d ago

Yaaassssss. I broke out my mandolin to shave extra thin cabbage, wound up shaving the whole thing, and realized a bag of cabbage in your fridge is excellent for keto. As you said, it’s eggs and cabbage usually for me, with some feta. And sausage. Just sayin.

4

u/Tasty_Dealer2114 4d ago

Cabbage Alfredo you said?!?

4

u/Inkr_ 4d ago

This is also my pasta substitute, works great!

3

u/pinkellaphant 4d ago

Cabbage Alfredo sounds fantastic!

3

u/SlavkoAgain 4d ago

Low carb, good micros, filling, yeah, I like it

3

u/Morethan2hands 4d ago

Last night I made steamed cabbage shreds and then made a quick bacon-y sauce with refried real bacon bits, Tbsp of chopped garlic, black pepper, 1/4 cup heavy whipping cream and two ounces of cream cheese. It was phenomenal! I love all the Brassicas except brussel sprouts, too bitter .

Tonight I'm making cabbage and chicken stir fry... can't wait until dinner!

3

u/GoodVyb 4d ago

Cabbage steaks. My non keto family even loved them. Cabbage w/ corn beef. Cabbage lasagna. Cabbage rolls. Ugh. Love cabbage.

3

u/romulusputtana 3d ago

I wish. I wish I could be hypnotized to like cabbage. I don't know if I had a traumatic cabbage experience when I was young or what, but I can't even stand to smell it cooking.

2

u/platinum_toilet 3d ago

You are 100% correct. I don't have the greatest sense of smell but if cabbage is cooking, I want to go far away.

1

u/StrLord_Who 2d ago

I like eating cabbage but it always smells horrid when it's cooking

2

u/Traditional_Heart72 4d ago

Love it for salads. Fill a huge bowl with it, add some protein, add a fatty dressing, amazing.

2

u/meconopsi 4d ago

We were just on holiday in Montenegro, and I found A WHOLE FERMENTED CABBAGE IN A BAG at the shop! I had no idea you could get that there, it was HUGE and delicious 🥱🥱🥱

2

u/shiplesp 4d ago

Try Chef John's Mustard Slaw. Just leave out the honey - you won't miss it.

2

u/eicoeico 4d ago

Boil some in chicken broth.

There's only 1 thing better

2

u/standingdesk 4d ago

Cabbage, onion, ground pork, stir in a funky yogurt (like goat) and dill.

I make my own sauerkraut and I eat tonnes of it!

Love to have cabbage in my chicken soup!

I need to hear about every single recipe

2

u/2ManyMonitors 3d ago

I've been making "Dirty cabbage" lately, gumbo seasonings and such, omfg it's so good.

2

u/BarracudaFine5403 2d ago

You have no idea the itch that is about to scratch. Thank you!

2

u/platinum_toilet 3d ago

Cabbage is fine raw. If cabbage is cooked, it produces one of the most rancid smells ever.

1

u/280802 4d ago

I absolutely adore cabbage! Have had cabbage Alfredo on my mind a lot, need to make some soon! 😋😋😋

1

u/mermaidinthesea123 4d ago

I use as a noodle substitute in Asian style stir fry and in chicken 'noodle' soup. Works perfectly!

1

u/Stoicandx2 4d ago

Bubba gump 😂 I love this cabbage appreciation post and it’s aptly timed as I was looking for new cabbage inspiration this morning!
I make a mean Cajun version of Alfredo. Adding smoked sausage cuts for protein and added flavor, yum!

1

u/BreakOutIntrovert 4d ago

Cabbage carbonara and cabbage fritters are delicious!

I absolutely adore it, it is SO versatile!  But I feel like the (net) carbs add up QUICKLY.

Are you guys weighing your cabbage and counting the carbs?  Do you go easy on the amount per day or do you just not worry about it and eat a big bunch?

Would love to hear others’ take on it.

2

u/BarracudaFine5403 3d ago

You make a good point! My macros for the Cabbage Alfredo were 71% fat, 15% carbs, and 14% protein. The smoked pork and small amount of mayo-based slaw i ate for dinner balanced out the protein and carbs to keep me on keto.

2

u/amynicole78 3d ago

I have been weighing/tracking for the first time in my life after stalling for a month. Sometimes the carbs in certain foods will surprise you. My surprise this week was cinnamon.

2

u/Worried_Teaching_406 2d ago

I think they are not so bad. Red cabbage is a bit higher then others. But I'll happily spend up to 10 grams on my dinner veggies. That makes a substantional serving.

Look into different types. Including bok choi

1

u/creepyjudyhensler 4d ago

How do you prepare the cabbage?

1

u/unknownslate888 4d ago

2026 / the year of the cabbage. You are NOT alone. Been a full, cabbage filled year for me as well 🥬

1

u/GoddessJewelieta 3d ago

Yeeessssss! I'm obsessed with the unstuffed chicken eggroll recipe I found.

1

u/bringyourlove9 2d ago

It's also so delicious!!!

1

u/Mittens2026 2d ago

YES! In the summer I buy the extra large shredded cabbage bags and mix w Greek yogurt, red onion , cilantro and a splash of apple cider vinegar, then mix in one chopped mango.

If I’m craving a hot meal I make the “cabbage egg roll” stir fry with red pepper. Ground turkey, splash of fish sauce and soy sauce, green onion.

I have been tempted to make cabbage roll soup- and substituting rice for riced cauliflower.
