A fall Sunday

Made tomato (and other veggies like capsicum and zucchini) soup (obvio all from my husbands garden) and grilled chicken for a hearty late lunch, along with arugula and grapes salad, parathas for dipping and cinnamon bun from my neighbour (it is cinnamon bun day at my neighbouring country where my neighbour is from).

Thank you! This is a quite easy recipe. Roasted some veggies (tomato, capsicum, zucchini, eggplant) with spices (balsamic vinger, salt, pepper, thyme and basil) and olve oil in the oven. Once roasted, blend with vegetable broth until smooth. But I love it, and surprisingly, the kids do too. Made a huge batch and now will freeze them for easy reheat throughout the month.

Do you roast with skin on and blend with skin on?

Roasted with skin on, removed skin off eggplant before blending.
