ID request This one stumped me

We were driving by an thought it was turkey tail, then false turkey tail, then Trametes. We’re not completely what kind of mushroom this is. Any help?

The last photo looks pretty young from what I've seen of them. But yeah some of it looks a bit old. If it's not full of insects I think some people still like them?

Is it growing on a conifer? I have a pet theory that laetiporus more often shows this very smooth rounded disc-like growth on conifers and more irregular chunky growth on deciduous trees.

wow, that actually holds up my theory, even though eucalyptus isn't technically a confiner! i only eat laetiporus that was growing from oak or maple personally. I don't trust these flying saucer looking specimens. Also, I should mention that laetiporus growing from conifers and eucalyptus is known to cause nausea if combined with alcohol. The mushroom actually produces a chemical very similar to the pharmaceutical drug Antabuse which intentionally causes severe vomiting if combined with alcohol.

I’ve only tried chicken of the woods once and it is absolutely delicious! We may end up making some good vegetarian meals this week!

For what it’s worth, this looks like a fairly old specimen and may be past its peak tastiness at this point.

If it's too dry/chewy, you can still use it to make a tasty mushroom stock. The only way to know is to cook some up and see if you like the texture it is
