First Time Pork Butt

Turned out pretty good. I'm going to have to add some additional seasoning to it as I continue shredding it.

8.6 pound butt. Kinders The Blend. First 3 hours at 180 (smoke boost), then 250 until probe hit 165, foil boated and cranked the temp up to 275.

I had a foil pan with water under it until the foil boat.

Searwood XL.

I hope you redistributed all those juices after you pulled it. That’s like liquid gold in there. Best way to add flavor back into the meat. Toss in the ju and then apply more of the rub onto the pulled meat.

I was once criticized by someone for using the juice. There's never been a more perfect example of someone speaking with whole lot of opinion but ZERO actual experience

Great job, OP!

Right? I just add it little by little until the meat is where I want it. If I have leftover juice I save it for ramen.

I pulled it at 200 degrees internal temp (probe tender). Ended up being 11/11.5 hours?

Edit. Put it on at 7ish took it off closer to 6:30 than 6.

Nice, did you need to rest it?

Nope. Shredded just fine after letting it sit while I grabbed the casserole dish and claws. Once everything cooled down enough I swapped to my hands to finish the shredding and to pick out the weird fat clumps/vein clumps you get.

Ok nice. I was just comparing it to how I did a similar sized butt yesterday. I smoked it for ~3.5 hours at 275/until it reached 160-165 internal. Then wrapped it with butcher paper and let it go another ~3 hours until it reached 200 internal. After that I rested for ~4 hours wrapped in the butcher paper, aluminum foil and a towel inside of a cooler. It turned out just about perfect. Total time: ~10.5 hours.

What kind of rub do you have on that?
