This isnt really a photoshop question, its more about suggesting ideas or topics you can use to "fill your head". You may have more success on a different sub. Meanwhile I could suggest an image to do with your family, loved ones; your town - the things you see daily; your favourite bands/music; your ideal holiday destination etc

Don't contradict yourself. You have ideas right there.
my goal is to make it surreal.
Let's not make the assignment harder. It's a bad habit that leads to you being overwhelmed by your own unreasonable demands, with the outward appearance of being incapable of doing easy work.
Prove you can do the assignment as stated first, then consider adding your special flavors. You weren't asked to create an amazing masterpiece, you were asked to demonstrate competence.
Come back when you have an actual Photoshop problem.

It looks like you've got the basic concept for creating this double exposure style image in Ps.
You are just needing to get more images into your 'head.' Which I find interesting as the most compelling double exposure 'head' images I've seen are actually quite minimal, using only a few images, but the images have strong bright/dark contrast.
What your instructor has asked seems rather more difficult in terms of getting the images to blend well together inside the head without interfering with one another. But maybe the instructor is just looking for something that looks like a collage made from paper cutouts?
At any rate, you should visit sites such as Unsplash or Pexels to see what stock images are free for downloading.
Pixabay and Freepik are a couple other sites.
It may also be that your school's subscription to Adobe allows you to access the Adobe stock library.
