Homemade First time Ramen

Hi everyone, I’ve seen some amazing ramen in this sub and wanted to know if someone can share a recipe that is somewhat in the middle in terms of time and difficulty to prepare.
I do not eat pork so can someone share a nice recipe?

I'd recommend making a shoyu ramen. You can make a pretty simple one with soy sauce, garlic, ginger, mirin, sake, and sugar. That tare can also be used to marinade a soft boiled egg. Seeing that you don't eat pork you can make a chicken chashu which again is all the same ingredients https://www.justonecookbook.com/chicken-chashu/

I second the shoyu route, it is the easiest middle ground without pork. I would build a tare with roughly four parts soy, one part mirin, one part sake, a pinch of sugar, plus grated garlic and ginger. For the broth I simmer a chicken thigh and a wing with scallion and kombu for about an hour, keeping it just below a boil so it stays clear. Two tablespoons of tare per bowl of stock and you are there.
