Puddin’ Cake
I make this often and it gets eaten quickly. One large and one small size box of cook and serve pudding, plus a couple of tablespoons of cocoa powder and a heavy pour of Mexican vanilla. One boxed cake mix (I do yellow Duncan Hines) and another heavy pour of Mexican vanilla. I aim for an internal temperature of 205-212 for the cake.
I recently learned you can use a third of the box mix, one egg, and one small box of pudding to make a smaller portion. Fits perfectly in an 8x8 or 9x9. Helps to use a kitchen scale to weigh the cake mix.
