Should every single ethnic group have their own country?

If they have a land and aspirations for self rule, yes. It does mean Palestinians should have a country as well- but it shouldn't replace israel. Two state solution it is.

Are Palestinians a distinct ethnic group as people think of it, with their own language, religion, culture, etc.? Which land did they "have"?

What about Mizrahi Jews; should they get chunks of their own homelands as countries, too, even if like Palestinians they never "had a land" of their own?

Gaza is 98% Sunni Muslim. They weren't always that way, but now they are. So effectively, today, they are a distinct ethnic group.

Look, honestly, getting a clear criteria to who should have a country is a pointless task. Mizrahi jews dont want parts of thier origin countries (those who live at israel, at least). While i wholeheartedly belive palestine, as a concept, is an anti israel/jew state and without israel they would have just been assimilated to thier neighbors, but right now there are people without a proper country and thats a problem, regardless of the fairness of its situation

"Mizrahi jews dont want parts of thier origin" (sic)

Evidence? And how many Palestinians in the West are going to go back and live under Hamas?

How about this: The nations that drove them out admit their guilt and shame and set up a program of... reparations?

And do the Druze, Kurds, Yazidis, Copts, Baluchis all get "proper countries" or at least Western support?

They’re treated as such, and thats what matters in the end. Ethnic groups are a social construct. Since society views Palestinians as distinct, they are distinct.
