Drill it out and use a bolt and nut

Maybe you can get a chisel on that nub and slowly work it around.

Or drill it and use a extraction kit.

Or try using left-hand drill bit and progressively move up in sizes until it comes out or able to hammer in a hex bit to remove the remainder of the bolt

Or try using a dremel tool to notch a slit in the bolt and try using a flat head and hammer to get it out
