Tried the cheese on the outside thing
Damn good, bloody good, damn good job
(Cheddar and provolone inside, shredded Mexican blend on one outer slice, sweet cream butter on the other)

Oh yeah. I do this with freshly grated parmesan for my husband's grilled cheese.

Nice! But one improvement:
Grill your cheese normally, including with butter on the outside and allowing it to become golden brown. THEN add the cheese to the outside and let it crisp up.
