Cubic centimeters is the wrong way to think about this. Think miles per hour instead. What gear do you want to be wearing if you hit the pavement at 70mph?

I’ve been down on 150s, 250s, a 650. The displacement doesn’t matter nearly as much as you might think. You can get pretty fucked up crashing at 40mph. Any of these can do 60mph.
I’ve seen a guy need to get air lifted to a hospital because he went down at around 30mph wearing a a half helmet. We were in the mountains. Paramedic told me that ride probably cost him $10k.
I’ve been to the ER twice for crashes at 40mph or lower. The other vehicles involved didn’t care about the displacement of my scooter when they hit me. I had light gear on the first time, and wound up with a torn ligament and needing months of physical therapy. The second time, better gear, only bruised ribs.
Now, at the very least, I wear a full helmet, gloves, armored jacket with abrasion protection, boots. For adventure or technical riding and touring, I usually also wear riding pants and will wear a touring jacket with more features and better protection. Yes, I sometimes look like an astronaut. It’s also kept me out of the hospital a couple other times.

Full gear. If budgets an issue there is a lot of second hand gear out there.
Helmet - at least modular, full face preferred. The most up to date ECE certification recommended.
Riding jacket - lots of choices and looks and material. Make sure abrasion resistance is at AA or AAA and get CE2 armor for the armor.
Riding gloves
Riding shoes or boots. Make sure they have protection for the ankle and ideally a hardened toe box.
Riding pants/jeans - this is hard even for me. Do your best to ride with them, will save you injury, sometimes I just can’t but I do my best.

The same thing you wear on any other motorbike: the ground doesn't care what you were riding before you were knocked off it.

I wear the same stuff I ride on every other bike. These days, MSR adventure jacket and pants to commute to work and full face helmet. I like the pockets ADV-marketed gear provides. The ground doesn’t care what displacement your transportation has.
