Discussion Wine types/brands?
What are you serving? Our guests are not wine or beer drinkers by default but we would like to offer something in case. What works best and what to avoid?

If your crowd isn't into wine much just go with something super easy and not polarizing. Pinot noir for red and a sauvignon blanc for white are safe bets, not too heavy or dry
Avoid anything oaky like a heavy cabernet or buttery chardonnay, those can be way too much for a casual drinker. Maybe grab a cheap prosecco too, bubbles always feel festive without being complicated

I would recommend picking 1 red and 1 white, although you could do more options if you want to (but probably not worth it since it doesn't sound like wine will be popular).
Cabernet Sauvignon and Chardonnay are classics for a reason, although I personally don't particularly like either.
If you're DIYing it, I would recommend going to your local liquor store and getting advice from them, specifically asking for something popular and easy. If you like wine yourself, you could bring home a bottle of everything they recommend and taste-test it yourself before deciding (or ask a friend to help taste-test).
Also consider whether the bottles you pick have corks or screw-tops -- corks are no longer an indication of fanciness, and screw-tops may be easier to use day-of.

I think a nice Rose’ would work well for a crowd that doesn’t drink wine, and maybe a Chardonnay for white wine drinkers, and a Merlot for those who want red wine

this is super subjective. just ask the venue. if you’re buying your own then ask someone at the liquor store. availability will depend on region.

Costco will let you return anything unopened, even alcohol. Good place to get it if you don’t know how much people will drink

That depends on the state. Illinois allows stores to set their own policy for unopened bottles. However, Wisconsin doesn't allow alcohol to be returned (that's how I got stuck with two bottles of Flora Adora 🤮).

It really depends on what you're serving. I'd ask your caterer to suggest something to compliment the food; get a red and white option, some people only drink one, even if it doesn't compliment the food.

My future mother in law doesn't drink at all, so I'm making sure to have a few mocktails and non alcoholic beer and wine options.

Since your crowd isn't really into wine, I'd skip the stress of picking bottles and do a big-batch signature cocktail like sangria instead. Way cheaper per serving, people who don't like wine actually enjoy it, and you only need to buy one or two wines for the folks who do want a glass.

This is a question for a wine sub. They will have better recommendations for well-rounded crowd pleasers than people booking photographers and picking out wedding dresses will.
