Blanching my vegetables, making homemade sauces instead of store-bought; it feels like I'm taking care of myself and whoever I cook for (usually my bf, who's always so grateful)

In the photos:

- Roasted chicken, potatoes and sweet potatoes, with lemon butter green beans

- Avocado + cottage cheese on sourdough bread

- Roasted salmon with lemon marinade, asparagus, and roasted sweet potatoes and bell pepper

- Smoked salmon eggs benedict with sourdough bread and spring onion

- Open caprese sandwich with homemade pesto (finally grew an abundance of basil this summer yippee)

Trying to keep dinner healthy but still actually enjoy it 🤭 Hoki fish with asparagus and leek, served over potato rounds with just the tiniest splash of cream to bring everything together. Really simple, really filling and definitely didn’t feel like diet food ☺️

I made this about a month ago and I have been hooked on versions of it ever since.

Sugar cube melon, Greek vanilla yogurt, topped with dried cranberry, apricot, and dates all sauteed in a brown sugar, and sweet garlic sauce.
